—1 jar of horse mackerel
—½ peeled onion
—Salt, pepper and olive oil
Cut the onion into feathers and sauté in a pan with olive oil and a pinch of salt, until it begins to brown. Turn off the heat and set aside. Meanwhile, in a bowl, beat the eggs and season with salt and pepper to taste. Then add the horse mackerel (peeled and grated) and the onion. Mix well and fry for a few minutes on each side.

Another light and inexpensive treat, the only difficulty of which is to cut the mushrooms and then sauté them.

—½ package Swiss chard, well washed and dried
-4 eggs

Cut the chard with a knife, separating the stem from the leaves. Reserve the latter and finely chop the stems. Then fry them in olive oil with a pinch of salt, until they soften a little. At this point, remove from heat to cool. Meanwhile, pass the Swiss chard leaves in boiling water for five minutes then drain. Once dry, cut them into strips.
Finally, in a bowl, beat the eggs and season with salt, pepper and just a hint of nutmeg. Add the stems, leaves and mix well. Pan fry for about 3 to 4 minutes on each side.

Open the eggs in a bowl and beat them by hand. Then add the fries, previously crushed into smaller pieces than the packet, and stir until completely submerged. Let stand for about five minutes. Finally, in a very hot skillet, and with a little oil, cook the tortilla for three to four minutes on each side.

Shrimp and coriander tortilla
-4 eggs
—250 grams of defrosted shrimp
—½ bunch of clean, dry cilantro
-1 finely minced garlic clove
—Salt, pepper and olive oil
In a skillet with olive oil, brown the prawns with the garlic and a pinch of salt and pepper. When they begin to brown, remove from heat and set aside. In a bowl, beat the eggs, add a pinch of salt and the finely chopped coriander, stems removed. Also add the prawns and stir. Heat a frying pan with oil and pour the contents of the bowl into it. Cook for a few minutes on each side and enjoy.
